Some of my favorite weekends are just spent around the house. I decided to make some Tomato Alfredo Sauce for our sausage ravioli we were having for dinner the other night. I like pasta although we rarely eat it, mainly because I hate store bought sauce.
I always thought making your own sauce would take forever and be a lot of work. This sauce took minutes and was simply amazing! This is now our favorite recipe and it is healthy!
(I made it in our Vitamix, but you can make it in any food processor).
Tomato Alfredo Sauce
Makes about 3 cups/ Only 60 Calories per 1/4 cup
4 Roma Tomatoes, halved
1 Cup Nonfat evaporated milk or low fat milk (I used skim milk)
1 cup low fat cottage cheese
2 tablespoons of light butter (I used light County Crock spread)
3 tablespoons of all purpose flour
salt and pepper to taste
I then topped my dish with some garlic and parmesan cheese!
