    I have always been a big fan of the menswear trend however, I do like to see a feminine spin on it. Menswear inspired pieces with a feminine twist have been seen on many runways that include male vests, trousers, blazers and accessories. The menswear trend gives an empowering edge to a woman.     Magnificent Mint Outfit!

    I posted yesterday that we celebrated my sister in-law’s birthday this past weekend. Anyway, for her birthday I gave her this adorable mint maxi dress and this cute mint cuff bracelet.  It makes such a cute mint outfit.  My sister in-law has been wanting to get in shape and lose some weight after having two children.  Over the past few months she has started a workout routine and really a lifestyle change and lost a lot of weight. She looks phenomenal!!!  She works a full time job, has two children and still found the time to dedicate to losing weight and getting in shape. Impressive I know!

    Obviously with losing a lot of weight she has had to buy new clothes. Awful problem to have, right? :) I think she’ll love the mint outfit I gave her. I wanted to get her something cute that she could wear out, yet be manageable for chasing two kids around. This mint maxi dress paired with this mint cuff bracelet is the perfect summer outfit!  Hopefully I can get some pictures of her to share soon!

    Seeing Stars Through All The Rain!

    It was one of the gloomiest weekends in a long time. One of those weekends that make it incredibly hard to leave the house, let alone your bed unless it’s a necessity. But we were celebrating my Sister and Brother-In-Law’s birthdays on Saturday, so I had to drag myself out of the house! My In-Laws have been in the restaurant business forever so I am always so excited when they are cooking.  The food is always amazing!

    Since it was just a casual night in with family and awful outside, I decided to wear my star tank top.  I paired this star tank top with a pair of black skinnies, this necklace and my new fav Aldo wedges.

    This is one of my favorite versatile tank tops.  I have worn this star tank top with anything from black skinnies and jeans to a dressier navy skirt and jean skirt. This star print tank top goes with everything!

    How Many Different Ways Can You Wear a Top?

    I am always grateful that I am in a career where I can have some flexibility if needed. On Monday our Grandma and Aunt came into town for an impromptu visit with my Mom, so my sister and I snuck away for a few hours to meet them for lunch. I threw on this comfy maxi dress from Nordstrom’s and decide to pair it with this top and this clutch from ChiChi Collections. I have worn this top many different ways, which is one of the reasons I love it. I am a firm believer in purchasing items that I know I can create many different outfits from. Here are 3 different ways I’ve worn this top so far!

    Addicted to Online Shopping?

    Is it possible? Yes! And I am. I’m absolutely crazy about online shopping. After all it is my line of work, so sometimes the two intertwine a little too easily. My new excuse for buying new things is “research”.  However, I am always looking for new lines to carry and bring to ChiChi Collections. It’s amazing how I could be working away and somehow I loose focus and before you know it I am online shopping again for myself. It’s bad, but not that bad. I failed to mention I am the biggest window shopper, this is how I still stay within my budget each month.

    No matter how much or how little you make I am a huge fan of budgets. Sometimes I spend my online shopping allotment in one month and other times I hold off for something a little more expensive.

    Here are a few items on my online shopping wishlist for this summer.

    1. I love this pearly statement necklace because it can be worn separate or together and is incredibly lightweight. This is very important for me when purchasing summer jewelry. It’s already hot here in Florida so I don’t want to be held down with heavy jewelry.

    2. This tee is so fun and right now I am loving this light blue hue. I love dressing casual on the weekend and this tee paired with a cute pair of shorts are just perfect.

    3. Lastly this handbag has been on my mind for months. I am terrible about changing up my handbag for everyday needs and could really use a fun bag for summer.

    Golf Cake Recipe!

    Yesterday was Father’s Day and my sister and I wanted to do something special for our dad.  Two of his favorite things in life are golf and beer, so we decided to make him a golf cake that actually was made with a bottle of dark beer. This golf cake is a chocolate stout cake with dulce de leche and vanilla bean buttercream. I came across this golf cake idea on Pinterest and couldn’t wait to actually make it, well with my sister’s help of course!

    Now, this golf cake takes time!  We spent about 2 1/2 hours making it and about 5 minutes eating this golf cake.

    Tip: We used coconut dyed with green food coloring instead of the buttercream for the decorative grass detail on top.  ALSO, we added a flag next to the hole!


     

    Chocolate Stout Cake with Dulce de Leche and Vanilla Bean Buttercream

    YIELD: 1 8-inch layer cake

    ingredients:

    For Cake:
    1 1/2 cups (1 bottle) stout or dark beer
    1 1/2 cups unsalted butter, cut into cubes
    1 cup dark or dutch-process cocoa powder, sifted
    3 cups all-purpose flour
    3 cups granulated sugar
    2 1/4 teaspoons baking powder
    1 teaspoon salt
    3 large eggs, at room temperature
    2/3 cup sour cream, at room temperature

    For Filling & Frosting:
    2 cups (4 sticks) unsalted butter, softened and cut into cubes
    3 3/4 cups powdered sugar, sifted
    1/4 cup heavy cream
    1 vanilla bean, scraped
    2 teaspoons vanilla extract
    pinch of salt
    3/4 cup dulce de leche, room temperature

    directions:

    Preheat oven to 350°F. Butter three 8-inch round cake pans or two 9-inch round cake pans. Line bottoms with parchment paper circles, then butter parchment. Set aside.

    Place the stout and butter in a large, heavy saucepan over medium heat, stirring occasionally until the butter melts. Remove from the heat, and whisk in the sifted cocoa powder until smooth. Pour into a heatproof bowl and let cool.

    In a medium bowl, whisk together flour, sugar, baking powder and salt. Set aside.

    In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat the eggs and sour cream on medium speed until smooth, about 3 minutes. Pour in the cooled cocoa mixture, and mix on medium speed until combined, about 1 minute.

    Slowly add the dry ingredients, a little bit at a time, and mix on low speed until incorporated, scraping the sides and bottom of bowl to be sure that all the dry ingredients are incorporated.

    Divide batter evenly among prepared pans, using a kitchen scale if possible to be sure the layers are even. Place cake pans on middle oven rack about 2? apart (if using three pans space over two racks in the upper and lower thirds of the oven), and bake until toothpick inserted into center comes out clean, about 35 to 40 minutes.

    Remove from oven and place on a wire rack until cool enough to handle. Run a small knife around the edges of each pan, then gently invert onto wire racks. Cakes should come out cleanly. Allow to cool completely. At this point, the cakes can be frozen until ready to use, up to 1 month. Simply wrap each layer individually in a double layer of plastic wrap and then store inside a large zip top bag. Personally, I always make my cakes a few days in advance and freeze them. I find the frozen cake to be much easier to level and frost than fresh cakes.

    To prepare frosting, in the bowl of a stand mixer fitted with the paddle attachment, beat butter for on medium speed until very pale & creamy, about 8 minutes. Add powdered sugar, a little at a time, mixing well after each addition. Add cream, vanilla bean, and vanilla extract and beat until light, creamy, and fluffy, about 6 minutes more.

    To assemble, level each cake layer by cutting of the domed top with a long serrated knife. Leveling the cakes is an important step for creating a beautiful layer cake. Not to mention eating the scraps is the best part.

    Place one layer, flat side down, on a cake stand or serving platter. To keep the platter clean while frosting, place 4 small strips of parchment or waxed paper just under the edges of the cake. This will allow you to frost the cake and then remove these strips cleanly later.

    Spread half of the dulce de leche evenly over top of layer, followed approximately 1/2 cup of buttercream. Position second layer on top and press to adhere. Repeat with remaining dulce de leche, another 1/2 cup of buttercream, and final cake layer, flat side up.

    Cover the entire cake with a thin layer of buttercream. This “crumb coat” will make frosting the cake easier. Refrigerate for about 15 minutes to allow this crumb coat to set. At this point if you will be coloring the remaining buttercream, add your food coloring to the mixing bowl and beat until color is smooth and uniform.

    Remove cake from refrigerator and frost with remaining buttercream, reserving some if necessary for piping decorative details or grass if desired.
