If you are looking for a guacamole recipe, you have to try this one! Guacamole is one my favorite simple dishes and I love that I can usually find all of the ingredients at the farmers’ market. I’ve mastered this simple guacamole recipe, which makes it my go-to dip when I am in a pinch!  When I make this guacamole recipe, I really don’t measure exactly… taste testing is so much more fun!

Guacamole Recipe

3 avocado – peeled, pitted and diced

1 tomato, diced

1/2 red onion, diced

1/2 teaspoon kosher salt

garlic to taste ( I love garlic so the more the merrier)

1 teaspoon Cumin

6 cilantro leaves, minced

1/2-1 tablespoon fresh lime juice

Directions for Guacamole Recipe:

Cut the avocado in half and scoop out the interior into a bowl with a spoon. I then mash the avocado with a fork. Once I have reached a level of creaminess I then combine the tomato, onion, salt, garlic, cumin, and cilantro leaves in a bowl and mix. Pour lime juice over the top of the guacamole. If you are not serving immediately follow these simple steps to store for later use. Place avocado pit in the bowl with the guacamole and then cover with plastic wrap, pressing the wrap down to the surface of the guacamole and store in refrigerator.

I have been so busy lately that I have not had the time to read. I was so excited when it came time for my recent trip to Colorado because I knew that I would have the nice long flight to dive into one of the books I have been dying to read.

My sister in law, Kristin recently gave me the book “Heaven is For Real” to read. I had not heard of it before until I started reading it. Then it seemed it was talked about everywhere.

What an amazing book! This book is a true story of a four year old who is the son of a pastor and during an emergency surgery slips from consciousness and enters heaven. It is told by the father who shares a simple message that heaven is for real. This was such a great book that I had a hard time putting it down and finished in just a few hours.

So this weekend was the first weekend in a long time where I found time to do some of the things I have been meaning to do for months. My birthday is coming up this week so yesterday my husband surprised me with all the supplies to plant some herbs! I have been talking about planting herbs and growing them for months, as my love for cooking continues to evolve.  So now I have Cilantro, Parsley, Oregano and Sweet Basil at my disposal. I guess as long as I can keep them thriving and alive!  If any of you have any “green” suggestions regarding planting herbs, please send them my way. I am sure I can use some help.

More and more we are seeing colored tights make their way back into many wardrobes and not just because of the cold weather. So the Golden Globes are over and the Carpet Fashion is in!  The red carpet at the Golden Globes classically stands as the first fashion show of the event-packed awards season. Garments seen during the spring/summer runway shows in New York and Paris surface and trends start to materialize that will shape the fashion world for the next few months.  So…what carpet fashion will be hot?  Blush shades and nude hues for sure!

Many carpet fashion trends were seen, however my favorite trend shown Sunday night by the celebrities was something simple but stunning. I loved seeing the blush shades, nude hue and light pink colored dresses especially worn by Heidi Klum, Kate Beckinsale and Charlize Theron. These starlets dominated the red carpet in these hues. To me watching the red carpet fashion is the best part of the Golden Globes. It’s fun to see all the fabulous dresses and I must admit it’s a blast seeing all the flops as well. I think we will see much more of these blush shades and nude hues very soon, thanks to the carpet fashion that emerged from the Golden Globes!  So watch out, spring will unveil lots of nude and softer pink garments.
